Chocolate is made from cocoa beans that have been roasted and ground. To make chocolate for eating, cocoa butter, sugar, and perhaps a flavoring are combined, and the paste is put through a series of rollers to further refine it. Quality chocolate is then the put through a conching machine to further smooth the chocolate. The chocolate is then tempered in kettles and molded.
Types of chocolate include bittersweet, semi-sweet, and milk chocolate, all of which can be molded into bars or chocolate chips, used as a coating around a filling, or mixed with nuts, fruit, etc. to form candy. Pastry chefs may also use it for piping and decoration or to make a chocolate sauce.
